The Fish Soup

The signature of L'alba is a clear soup, slowly drawn from fish of the Goto Islands.

From head to tail, all of the fish, over time. We pare away the excess and let only the depth of flavour remain in the cup.

There is nothing showy about it. Yet in a single sip, you can taste the sea of that day. That is the quiet plate we aim for.

The fish changes with the season and the catch. Taste the sea of the day, somewhere within the course.
